The Encyclopedia of Creative Cooking: Basic Court Bouillon For Seafood

  • 2 medium carrots, grated
  • 1 medium onion, minced
  • 1/2 bay leaf
  • 1/4 cup tarragon vinegar
  • 1 quart cold water
  • 2 peppercorns

Place all ingredients except peppercorns in 2-quart saucepan; bring to boil. Reduce heat; simmer 15 minutes. Add peppercorns; simmer 12 minutes. Cool to lukewarm; strain.
