- 2 medium carrots, grated
- 1 medium onion, minced
- 1/2 bay leaf
- 1/4 cup tarragon vinegar
- 1 quart cold water
- 2 peppercorns
Place all ingredients except peppercorns in 2-quart saucepan; bring to boil. Reduce heat; simmer 15 minutes. Add peppercorns; simmer 12 minutes. Cool to lukewarm; strain.
