Colorado Cooking: Fig Cookies

Dough

  • 1/2 c. shortening
  • 1 c. sugar
  • 1 egg
  • 1/2 c. milk
  • 3 1/2 c. flour
  • 2 tsp. cream of tartar
  • 1 tsp. baking soda
  • 1 tsp. vanilla

Filling

  • 1 c. figs
  • 1 c. water
  • 1/2 c. sugar
  • 1 T. flour

Cut the fig into small pieces. Add the other filling ingredients and cook until like jam.

Cream the shortening and sugar; add egg and beat well. Add milk, flour, cream of tartar and vanilla. Mix thoroughly and chill. Roll out and cut into rounds. Place a teaspoon of filling on each round and cover with another round. Pinch edges together. Bake at 350 degrees for about 12 minutes or until lightly tan in color.
