Encyclopedia of Creative Cooking: Pancakes

  • 2 c. Flour
  • 3 tsp. Baking Powder
  • 1/2 tsp Salt
  • 1 tbsp. Sugar
  • 2 Eggs
  • 1 1/4 c. Milk

Sift together flour, baking powder, salt, and sugar.

Beat eggs well; stir in milk. Add flour mixture; beat until smooth. Add melted shortening. Pour from tablespoon onto hot griddle or frying pan (there is no need to use grease). Cook until golden brown; turning only once.

Yield about 24.
