- 1/2 c. cottage cheese
- 2 eggs
- 2 T. flour
- 1/8 tsp. salt
- Dash of cinnamon
In a medium bowl, mash cottage cheese until almost smooth. Add eggs; beat lightly. Add flour, salt and cinnamon; mix well. Drop by scant 1/4 cup onto lightly greased hot griddle or heavy skillet. When bubbles appear on top, turn and brown lightly on other side. Makes 2 servings.
