Cake
- 1 pkg. Duncan Hines white cake mix
- 1 pkg. pistachio instant pudding
- 3/4 c. salad oil
- 1 c. 7-Up
- 3 slightly beaten eggs
- 1/2 c. coconut
- 1/2 c. chopped walnuts
Mix the cake mix, pudding mix, salad oil and 7-Up gently. Do not over beat. Add eggs, coconut and walnuts. Bake at 350 degrees in a greased tube pan for about 50 minutes.
Frosting
- 1 pkg. pistachio instant pudding
- 1 c. milk
- 1 9-oz. carton Cool Whip
Mix the pudding and milk together. Fold in Cool Whip and spread over cooled cake. Sprinkle lightly with coconut. Refrigerate.
Serves 12 to 16.
