2 heads cauliflower
3 green peppers
2 lb. carrots
1 bunch celery
1 lb. mushrooms
3 zucchini
1 bunch broccoli
2 cucumbers
1/2 c. salad oil
1/2 c. olive oil
3 c. tarragon vinegar
1/2 – 3/4 c. sugar
3 garlic cloves
1 Tbsp. salt
1 Tbsp prepared mustard
2 tsp. tarragon leaves
Pepper to taste
Cut up all vegetables into bite-size pieces. Combine salad oil, olive oil, vinegar, and remaining ingredients; stir until well mixed. Pour oil mixture over vegetables. Cover and chill at least 12 hours (better overnight), stirring occasionally. makes 30 servings,about 125 calories per serving.
