1/2 lb. macaroni
2 stalks celery
1 red onion
4 hard-boiled eggs
1 c. salad olives
1 c. mayonnaise
2 tsp. chopped parsley
Salt and pepper
Cook the macaroni in salted water until it’s tender and drain. Chop the onion, celery, and olives and mix well with the macaroni. Add salt, pepper, and the mayonnaise. Decorate the top with sliced hard-boiled eggs and chopped parsley. You can add chopped green peppers or scallions, or eliminate the olives, if you’d like. Perhaps you prefer raisins or chopped nuts; just season it well and you’ll have a delicious dish.
