German Potato Salad

6 potatoes

1/2 lb. bacon, diced

1 onion, diced

1 Tbsp. flour

1/2 c. vinegar

1/2 c. water

1 tsp. salt

1/2 tsp. pepper

1 tsp. sugar

Boil potatoes, peel and cube. Dice raw bacon and fry in large skillet until pieces are brown and crisp. Remove bacon bits and drain on paper towel. Saute onion in bacon fat until soft, but not browned. Stir flour into fat in pan. mix together vinegar,1/2 c. water, salt, pepper, and sugar. Add gradually to skillet mixture, stirring constantly over low heat. Add cooked, cubed warm potatoes and heat thoroughly. Add bacon bits and mix together. Makes 6 servings.
