Turkey-Tofu Meatballs

8-oz. turkey, ground

8-oz.tofu, drained well

1/4 c.rolled oats

1/4 c. fresh bread crumbs

1 garlic clove, minced

1/4 c. onions, finely diced

1/4 c. carrots, grated

1/4 c. mushrooms, minced

2 T. tomato paste

2 T. Parmesan cheese

1 to 2 T. Italian seasonings

Combine all the ingredients together. Shape into 1 inch meatballs. Bake on a non-stick baking dish for 30 minutes at 375 degrees. Makes thirty 1-inch meatballs.
